A lesson learned, Low Carb Pancakes

Earlier this week I decided I wanted breakfast for dinner, so I researched low carb pancake recipes.  I was looking for simple recipes that didn't use crazy ingredients and had good reviews.  I found a recipe using Pinterest (of course) at Skinny Momma's Blog.  All it required was almond flour, sweetener of your choice, eggs, and oil.  I bought the almond flour awhile ago, on a whim, and stored it in my freezer, so I was happy to find a recipe that used it.  I followed the recipe, tweaking it just a bit.  The recipe was incredibly simple and came out really good.  After dinner I decided to enter the recipe into a calorie calculator and that is where I was shocked, three small pancakes equaled almost 700 calories!  I still had to add in my scrambled eggs, bacon, and jam... this took my dinner to well over 1,000 calories.








I ended up feeling bamboozled, but then I realized that it was my fault.  Focusing on carb counts is great, but I need to make sure to see the WHOLE picture and consider the calorie count of the ingredients I use.   I guess I am bound to make mistakes on this journey, but I kept thinking, "I could have had a cheeseburger for less calories!" The lesson has been learned... for pancakes at least!  I am still sharing the recipe because it was quite good and if you are just doing a plain old low carb diet it could become part of your repertoire or if you are gluten free, this is a great recipe!

 Low Carb Pancakes
Yield:  7 1/4 cup pancakes 
Ingredients

1 1/2 cups Almond Flour 
2 eggs 
1/4 cup water
2 tbsp. vegetable oil 
1tbsp. Tastefully Simple Mulling Spice (or use a sweetener of your choice and cinnamon)

Directions
Mix all the ingredients in a medium sized bowl.  Using a 1/4 cup measure, pour pancake batter onto a preheated griddle.  Cook until small bubbles form on the top and the bottom is brown.  Flip and cook on the other side (less than 1 minute).  Serve with butter, jam, or sugar free maple syrup.

  1. A cheeseburger would have been a lot more carbs and the carbs are what turns to fat. The jam is a killer, too. You have to choose which diet you want to do - counting carbs or calories, not both at the same time. Good luck!

    1. I totally agree Janet Coker. A LC diet does not take into account calories however if you combine high sugared items like Jam, it can have a reverse effect on weight loss. I follow a LCHF lifestyle and I don't count calories. I've lost tons of weight, got my blood levels to that of a teenager (I'm 60), was able to stop my osteo arthritis meds. Problem is this country is still programmed to buy low fat, reduced fat, 100 calorie package items. The food industry makes tons of money on these items. Trouble is, these items are filled with processed, or added ingredients most of which we cannot pronounce let alone understand their impact on our well being. The pancake recipe is perfect if you are following a low carb diet but leave out the maple syrup and jam and just include the side of bacon.

  3. I found a high protein pancake mix that I'm pretty excited about. Not low carb but an occasional breakfast idea called flapjacked. Order from them online. Or another idea is I buy the heart healthy Bisquick. I eliminate the egg, add a scoop of protein powder and mix it with almond milk. I also add a blend of cinnamon and Splenda to the batter for a yummy cinnamon pancake. Low carb and high in protein!
